Our commitment to our cuisine begins with the ingredients. Our chef personally visits the producers to taste and carefully select the ingredients harvested in the three Tokai prefectures of Aichi, Mie, and Gifu, as well as the Hokuriku region. We receive these lovingly prepared ingredients from the producers in search of a delicious meal, and then use simple yet time-honored cooking methods to allow you to enjoy the natural flavors of the ingredients.

The chef himself visits the production areas and markets each season, and receives the ingredients lovingly from the farmers one by one.
